What is Sodium Tartrate?
Sodium Tartrate is a PH-Regulating agent with antioxidant activity. It is particularly effective retarding hydrolysis while heating at high temperatures, resulting in increase of acid values (AVs) of vegetable oils. It acts as an emulsifier and pH control agent in food products.
